  • 4 oz frozen chicken breast (Aldi frozen chicken keeps it time-friendly)

  • 1 serving black beans, drained

  • ¾ cup chopped green peppers

  • ½ cup salsa

  • 1 tbsp guacamole

  • Sprinkle of parmesan cheese

  • Lemon pepper seasoning, to taste

  • Crushed red pepper flakes, to taste


Instructions

  1. Cook the chicken: Microwave the frozen chicken breast according to package directions until fully cooked.

  2. Prepare the cauliflower rice: Microwave the frozen cauliflower rice according to package instructions (usually 3–5 minutes).

  3. Combine the bowl: In a bowl, layer the cauliflower rice, black beans, green peppers, salsa, and cooked chicken.

  4. Add toppings: Dollop with guacamole, sprinkle with parmesan, and season with lemon pepper and crushed red pepper flakes to taste.
