Ingredients
3 cups frozen cauliflower rice (Aldi brand)
4 oz frozen chicken breast (Aldi frozen chicken keeps it time-friendly)
1 serving black beans, drained
¾ cup chopped green peppers
½ cup salsa
1 tbsp guacamole
Sprinkle of parmesan cheese
Lemon pepper seasoning, to taste
Crushed red pepper flakes, to taste
Instructions
Cook the chicken: Microwave the frozen chicken breast according to package directions until fully cooked.
Prepare the cauliflower rice: Microwave the frozen cauliflower rice according to package instructions (usually 3–5 minutes).
Combine the bowl: In a bowl, layer the cauliflower rice, black beans, green peppers, salsa, and cooked chicken.
Add toppings: Dollop with guacamole, sprinkle with parmesan, and season with lemon pepper and crushed red pepper flakes to taste.
