Almond Flour Apple Cinnamon Bread

Ingredients:

  • 2 Cups Almond Flour

  • 2 TBSP Coconut Sugar

  • 1/4 Cup Light Agave Syrup (or Maple Syrup)

  • 2 TBSP Corn Starch

  • 1 TSP Baking Powder

  • 1/2 TSP Baking Soda

  • 2 Eggs

  • 3/4 Cup Apple Sauce

  • 1/4 Cup Melted Coconut Oil


For topping:

  • 1.5 TBSP Cinnamon

  • 1/4 Cup Coconut Sugar


Directions:

  • Preheat the oven to 350 degrees. Line a loaf pan with parchment paper or spray with non-stick spray.

  • In a large bowl mix together the almond flour, coconut sugar, agave syrup, corn starch, baking soda, and baking powder. Fully combine.

  • Add in the eggs, apple sauce, and melted coconut oil.

  • In a small separate bowl stir together the cinnamon and coconut sugar for the topping.

  • Add about half of the batter to the loaf pan. Sprinkle half of the cinnamon mixture on top.

  • Add the other half of the batter, and top with the remaining cinnamon mixture.

  • Bake for about 45-55 minutes or until a toothpick comes out clean. Let cool, slice, and enjoy!

  • Note: The "bread" will have less structure due to the almond flour - so I recommend slicing and scooping onto a plate or bowl!
