Ingredients:
Dry:
2.5 cups almond flour
½ tsp baking powder
1 tsp baking soda
½ tsp salt
¾ cup chocolate chips
Wet:
¾ cup baking stevia or sugar substitute of choice
½ cup unsalted butter, melted
2 eggs
1 tsp vanilla extract
½ tsp maple extract
Instructions:
In a medium bowl, combine the almond flour, baking powder, baking soda, and salt. Mix well and set aside.
In a separate bowl, cream the melted butter and stevia together. Add the eggs, vanilla extract, and maple extract. Mix until fully combined.
Gradually add the dry ingredients to the wet mixture and stir until combined. Fold in the chocolate chips.
Refrigerate the dough for at least 1 hour.
Preheat the oven to 325°F (165°C).
Scoop the dough onto a baking sheet, forming about 16 cookies. Slightly press each cookie down to flatten.
Bake for 7–8 minutes or until the edges are lightly browned.
