Broccoli & Pepper Jack Bites

Total Time: About 30 Minutes - Makes About 12 Bites
Packed with broccoli, cheese, and healthy fats, these bites support balanced blood sugar and make snacking smarter and tastier.


Ingredients:
~1½ cups broccoli, finely chopped or “riced”
1 cup shredded pepper jack cheese
1 egg
1 TBSP olive oil
½ cup almond flour
½ teaspoon garlic powder
¼ teaspoon onion powder
Lemon pepper, to taste
Salt & pepper, to taste
Instructions:
Preheat your oven to 400°F and lightly grease a mini muffin pan.
Prepare Broccoli: Chop broccoli finely or use riced broccoli. Steam or microwave just until tender—avoid overcooking.
Drain Excess Moisture: Let broccoli cool slightly, then squeeze out as much water as possible for a firmer texture.
Mix Ingredients: In a large bowl, combine broccoli, cheese, egg, olive oil, almond flour, garlic powder, onion powder, lemon pepper, salt, and pepper. Mix until a thick, cohesive batter forms.
Fill Muffin Pan: Scoop the mixture into the mini muffin cups, filling each about ¾ full.
Bake: Bake for 18–20 minutes, until edges are golden and bites are set.
Cool & Serve: Let the bites cool for a few minutes in the pan before removing. Serve warm or at room temperature. Enjoy!
