These Cashew Cocoa Fudge Bites balance a lower-sugar base of cashew butter, cocoa, and stevia with just a touch of sweetness from milk chocolate chips. With protein and fiber from cashew butter and almonds, they’re a satisfying option that supports both nutrition and enjoyment.

What You Need:

  • 1 cup cashew butter

  • ¾ cup cocoa powder

  • ½ cup baking granulated stevia (adjust to taste)

  • ¼ cup sliced almonds

  • ¼ cup milk chocolate chips

  • ½ tsp vanilla extract

  • 1 tbsp almond milk (optional)

  • Mini muffin tin mold


Directions:

  1. In a mixing bowl, combine the cashew butter, cocoa powder, stevia, and vanilla until smooth and thick, like a fudge consistency.

    • If the mixture is too dry, add 1 tbsp almond milk (or milk of choice).

  2. Stir in the sliced almonds and chocolate chips.

  3. Press the mixture evenly into a mini muffin tin.

  4. Refrigerate for about 1 hour, or until firm.

  5. Store in the refrigerator until ready to enjoy.
