This Cheesy Broccoli & Turkey Bacon Egg Bake is a simple, protein-packed dish perfect for breakfast, brunch, or meal prep. Made with frozen broccoli, turkey bacon, eggs, and cheddar cheese, it’s easy to throw together and bakes in just 20 minutes. Flavorful, filling, and customizable with your favorite seasonings—it's a great way to start the day!

Ingredients:
3 cups chopped broccoli (frozen)
5 slices of turkey bacon
1/2 cup chopped onions
8 eggs
Optional 1/2 Cup cottage cheese (only use 6 eggs if using cottage cheese)
1/2 cup shredded cheddar cheese
Salt and pepper (or seasoning of choice) to taste
Directions:
Preheat your oven to 400°F (200°C).
Cook the turkey bacon according to the package instructions. Once cooked, let it cool, then slice into small pieces.
Sauté the chopped onions on the stovetop for a few minutes, until slightly browned.
Microwave the broccoli according to the package directions. Drain excess moisture if needed.
In a large bowl, whisk together the eggs, shredded cheese, cottage cheese (optional) and seasonings.
In a large baking dish, add the cooked broccoli, turkey bacon pieces, and sautéed onions.
Pour the egg mixture evenly over the top.
Bake for about 20 minutes, or until the eggs are fully set.
Let cool slightly, slice, and enjoy!
