Chicken, Black Bean, Avocado Bowl

Total Time: About 20 Minutes | Makes 1 Serving


An easy lunch or dinner recipe! To meal prep this for the week, multiple each ingredient amount by 7 and prep in advance!

What you need:

  • 4 oz Chicken Breast

  • 1 TSP Crushed Red Pepper

  • 1 TSP Black Pepper

  • 1 TSP Olive oil

  • 1/4 Cup Black Beans

  • 1 Avocado

  • 1 Cup of Broccoli

  • 1.5 Cups of Lettuce

  • Creamy Avocado Dressing (I use the aldi brand - but you can substitute with your dressing of choice!)


Directions:

  • Cook the chicken on a non-stick pan on medium heat for about 12-15 minutes or until fully cooked.

  • Add in the broccoli to the pan. Add the olive oil, black pepper, and crushed red pepper and stir for about 5-7 minutes. Let cool.

  • Drain and rinse the black beans and set aside.

  • On a cutting bored, slice the avocado into small chunks.

  • In a bowl, add the lettuce, avocado, black beans, chicken, and broccoli.

  • Top with the avocado dressing and enjoy!
