Cranberry Peanut Salad Bowls

A refreshing and protein-packed salad perfect for weekly meal prep! Loaded with juicy chicken breast, crisp cucumbers, creamy feta, crunchy peanuts, sweet cranberries, and tossed in balsamic vinaigrette — it's a balanced, flavorful meal that's easy to grab and go.


What You Need (Makes 7 Servings):
24 oz chicken breast (about 3.5 oz per serving)
4 cucumbers (about ½ cucumber per serving)
3 Green Bell Peppers (about 1/2 cup chopped per serving)
2 cups feta or goat cheese (about ¼ cup per serving)
1½ cups dried cranberries (about 3 tbsp per serving)
1 cup peanuts (about 2 tbsp per serving)
4 bags of lettuce (about ½ bag per serving)
Balsamic vinaigrette dressing
Seasonings of choice
Directions:
Prep the Chicken:
Slice chicken into small chunks and season as desired.
Cook in a non-stick pan for 10–14 minutes or until fully cooked. Set aside.
Chop Veggies:
Dice cucumbers and bell peppers into bite-sized pieces and set aside.
Assemble Meal Prep Containers:
Lay out 7 containers.
Add equal portions of feta, dried cranberries, peanuts, green peppers and cucumbers to each.
Store in the refrigerator.
Store Chicken Separately:
Keep cooked chicken in its own container for easy reheating.
When Ready to Eat:
Add lettuce to a bowl.
Reheat chicken (let cool slightly), then add to salad along with toppings.
Drizzle with balsamic vinaigrette and enjoy!
