Easy "Burger Bowls"

What You Need:

  • 1 Cup Shredded Lettuce

  • 4 OZ Lean Ground Turkey

  • 1 Medium Potato

  • 1 TBSP Pickles

  • 1 Slice of Pepper Jack Cheese

  • 1 TSP Dijon Mustard

  • 1 TBSP Light Mayo

  • Chile Lime Seasoning

  • Salt & Pepper - to taste

  • 1/2 TBSP Olive Oil

  • Ketchup - for topping


Directions:

  • Preheat the oven to 425 degrees. Slice the potato into wedges. Add to a baking sheet and top with olive oil, Chile lime seasoning, and salt and pepper. Bake for about 25 minutes or until brown. Set aside and let cool.

  • Fully cook and season the ground turkey as desired. Let cool.

  • In a bowl, add the lettuce, pickles, and pepper jack cheese. Add in the baked potato wedges and cooked turkey.

  • Top with the dijon mustard, light mayo, and ketchup. Enjoy!
