Easy "Burger Bowls"

An easy Summer dinner idea!


What You Need:
1 Cup Shredded Lettuce
4 OZ Lean Ground Turkey
1 Medium Potato
1 TBSP Pickles
1 Slice of Pepper Jack Cheese
1 TSP Dijon Mustard
1 TBSP Light Mayo
Chile Lime Seasoning
Salt & Pepper - to taste
1/2 TBSP Olive Oil
Ketchup - for topping
Directions:
Preheat the oven to 425 degrees. Slice the potato into wedges. Add to a baking sheet and top with olive oil, Chile lime seasoning, and salt and pepper. Bake for about 25 minutes or until brown. Set aside and let cool.
Fully cook and season the ground turkey as desired. Let cool.
In a bowl, add the lettuce, pickles, and pepper jack cheese. Add in the baked potato wedges and cooked turkey.
Top with the dijon mustard, light mayo, and ketchup. Enjoy!
