Easy "Clean" Strawberry Shortcake

Total Time: About 30 Minutes | Makes About 7 Servings


What You Need:
For the Shortcake:
1 Cup Vanilla Greek Yogurt
1 Tsp Vanilla Extract
2 Eggs
1/2 Cup Coconut Sugar
1/4 Cup Coconut Oil (or olive oil)
2.5 Cups Almond Flour
1 Teaspoon Baking Powder
For the Topping:
Almond Whipped Cream (or whipped cream of choice)
About 3 Cups Strawberries
Directions:
Preheat oven to 350 degrees.
Mix together the eggs, yogurt, oil, vanilla, and coconut sugar until combined.
Mix in the almond flour and baking powder until smooth.
Add to a round baking dish and bake for about 20 minutes (or until cake is lightly browned).
Let cool. Slice into pieces and top with whipped cream and strawberries!
