Easy "Clean" Strawberry Shortcake

Total Time: About 30 Minutes | Makes About 7 Servings

What You Need:


For the Shortcake:

  • 1 Cup Vanilla Greek Yogurt

  • 1 Tsp Vanilla Extract

  • 2 Eggs

  • 1/2 Cup Coconut Sugar

  • 1/4 Cup Coconut Oil (or olive oil)

  • 2.5 Cups Almond Flour

  • 1 Teaspoon Baking Powder


For the Topping:

  • Almond Whipped Cream (or whipped cream of choice)

  • About 3 Cups Strawberries


Directions:

  • Preheat oven to 350 degrees.

  • Mix together the eggs, yogurt, oil, vanilla, and coconut sugar until combined.

  • Mix in the almond flour and baking powder until smooth.

  • Add to a round baking dish and bake for about 20 minutes (or until cake is lightly browned).

  • Let cool. Slice into pieces and top with whipped cream and strawberries!
