Easy Coconut Chicken Bowl

Total Time: About 30-Minutes | Makes About 7 Servings

What You Need:

  • About 28 Ounces of Chicken Breast (4 oz per serving)

  • About 2 Cups of Brown Rice, Dry

  • 1/4 Cup Reduced Sodium Chicken Broth

  • 1 1/4 Cup Canned Coconut Milk

  • 1.5 TBSP Tomato Paste

  • 2 TSP Corn Starch

  • Salt & Pepper to taste

  • Lemon Pepper Seasoning

  • Granulated Garlic

  • Green onions for topping


Directions:

  • Cook the brown rice according to the instructions on the package.

  • Slice the chicken into small pieces. Cook on a non-stick skillet on medium heat. Season with lemon pepper and granulated garlic.

  • Once the chicken is fully cooked, remove from the pan and set aside.

  • Add the chicken broth, coconut milk, tomato paste, and corn starch to the skillet and stir for about 3 minutes.

  • Add in the chicken and fully combine. Add salt and pepper to taste.

  • Combine the rice and coconut chicken and top with green onions. Enjoy!
