Easy Coconut Chicken Bowl

What You Need:
About 28 Ounces of Chicken Breast (4 oz per serving)
About 2 Cups of Brown Rice, Dry
1/4 Cup Reduced Sodium Chicken Broth
1 1/4 Cup Canned Coconut Milk
1.5 TBSP Tomato Paste
2 TSP Corn Starch
Salt & Pepper to taste
Lemon Pepper Seasoning
Granulated Garlic
Green onions for topping
Directions:
Cook the brown rice according to the instructions on the package.
Slice the chicken into small pieces. Cook on a non-stick skillet on medium heat. Season with lemon pepper and granulated garlic.
Once the chicken is fully cooked, remove from the pan and set aside.
Add the chicken broth, coconut milk, tomato paste, and corn starch to the skillet and stir for about 3 minutes.
Add in the chicken and fully combine. Add salt and pepper to taste.
Combine the rice and coconut chicken and top with green onions. Enjoy!
