Easy "Freezer" Breakfast Burritos

An easy breakfast idea to prep in advance and store in the freezer for the week!

What You Need:

  • 1 Large Whole Wheat Tortilla

  • 1 Egg

  • 1 Egg White

  • 1 Chicken Sausage Link

  • 1/4 Cup Diced Bell Peppers

  • 2 TBSP Diced Onions

  • 1 OZ Shredded Cheddar Cheese

  • 1 TSP Olive Oil

  • Salt & Pepper to taste

  • Salsa - optional for topping

  • Avocado - optional for topping


Directions:

  • Heat the olive oil in a skillet over medium heat. Chop the chicken sausage into small pieces. Cook for about 5 minutes or until browned. Remove and set aside.

  • Add the diced bell peppers and diced onion to the skillet and cook for about 3-5 minutes.

  • In a bowl, whisk together the egg and egg white. Add salt and pepper to taste or other seasonings of choice. Add the eggs to the skillet with the bell peppers and diced onions and until the eggs are fully cooked. Let cool.

  • Add the cooked sausage, egg mixture, and shredded cheese to the tortilla. Top with salsa and avocado. Fold the tortilla and enjoy!

  • NOTE: If meal prepping for the week and freezing, wrap the burrito in foil and place in an airtight container. To reheat, place in the microwave for about 2 minutes or until heated through.
