Easy One-Pan Chicken Fajita Bake

Total Time: About 75 Minutes | Makes About 8 Servings

What You Need:

  • 3 Bell Peppers

  • 2 Cups Instant Brown Rice

  • 1/2 Packet (or more or less depending on preference) of Fajita or Chili Seasoning

  • 1.5 (4 oz) Cans of Green Chiles

  • 1.5 (15.2 oz) Cans of Corn

  • 21 Ounces of Frozen Diced Chicken Breast

  • 1 TBSP Olive Oil

  • 3 Cups of Low Sodium Chicken Broth

  • 4 TBSP Tomato Paste

  • 2 Cups Shredded Monterey Jack Cheese


Directions:

  • Preheat the oven to 400 degrees F.

  • Chop the bell peppers into small pieces. Add the bell peppers, rice, and fajita (or chili) seasoning to a large baking dish. Combine together.

  • In a seperate bowl, add the green chiles, tomato paste, chicken broth, and olive oil. Fully combine.

  • Add the mixture to the baking dish and combine.

  • Add the corn and diced chicken and stir.

  • Cover with aluminium foil and bake for about 45-50 minutes or until all of the liquid is absorbed.

  • Remove from the oven and top with the shredded cheese. Bake for another 6-8 minutes.

  • Let cool and enjoy!

  • Note - can top with salsa or avocado.
