Easy One-Pan Chicken Fajita Bake

Total Time: About 75 Minutes | Makes About 8 Servings

What You Need:
3 Bell Peppers
2 Cups Instant Brown Rice
1/2 Packet (or more or less depending on preference) of Fajita or Chili Seasoning
1.5 (4 oz) Cans of Green Chiles
1.5 (15.2 oz) Cans of Corn
21 Ounces of Frozen Diced Chicken Breast
1 TBSP Olive Oil
3 Cups of Low Sodium Chicken Broth
4 TBSP Tomato Paste
2 Cups Shredded Monterey Jack Cheese
Directions:
Preheat the oven to 400 degrees F.
Chop the bell peppers into small pieces. Add the bell peppers, rice, and fajita (or chili) seasoning to a large baking dish. Combine together.
In a seperate bowl, add the green chiles, tomato paste, chicken broth, and olive oil. Fully combine.
Add the mixture to the baking dish and combine.
Add the corn and diced chicken and stir.
Cover with aluminium foil and bake for about 45-50 minutes or until all of the liquid is absorbed.
Remove from the oven and top with the shredded cheese. Bake for another 6-8 minutes.
Let cool and enjoy!
Note - can top with salsa or avocado.
