Easy One-Pan Veggies & Sesame Chicken

Total Time: About 55 Minutes | Makes About 7 Servings

What You Need:

  • About 28 ounces of chicken (4 ounces per serving)

  • 3/4 cup sesame sauce

  • 1 tablespoon olive oil

  • 4 cups broccoli (frozen is fine)

  • 1 onion, diced

  • 2 cans diced tomatoes, drained

  • 4 zucchinis, diced

  • Sesame seeds (for seasoning)

  • Ground ginger (for seasoning)

  • Crushed red pepper flakes (for seasoning)

  • Salt and pepper, to taste


Directions:

  1. Preheat the oven to 475°F.

  2. Line two baking sheets with parchment paper.

  3. Dice the zucchini and onions, then add them to one of the baking sheets.

  4. Drain the tomatoes. Add the tomatoes and broccoli florets to the same baking sheet.

  5. Add olive oil, 1/2 cup of the sesame sauce, ground ginger, crushed red pepper flakes, and salt and pepper to taste.

  6. Use your hands to mix everything thoroughly. Bake in the oven for about 40 minutes, or until the vegetables are fully cooked. Let cool.

  7. Dice the chicken into small pieces and add to a small bowl. Add the remaining 1/4 cup of sesame sauce and mix well. Sprinkle with sesame seeds.

  8. Cook the chicken in the oven for about 20–25 minutes, or until fully cooked.

  9. Divide the cooked vegetables and chicken into seven meal prep containers. Store in the refrigerator or freezer, and reheat in the microwave on the day of eating.
