Egg Roll "In A Bowl"

Total Time: About 30 Minutes | Makes 1 Serving


What You Need:
4 Ounces Ground Turkey
1.5 Cups Coleslaw
1/4 Cup Chopped Red Cabbage
1/4 Cup Shredded Carrots
3 TBSP Chopped Onions
1/2 TSP Sesame Seed Oil
1/2 TSP Rice Vinegar
1 TBSP Low Sodium Soy Sauce
1/4 TSP Ground Ginger
1/4 TSP Granulated Onion
1/2 TSP Minced Garlic
1 TBSP Green Onions - topping
1/2 Cup Broccoli
For The Sauce:
1 TBSP Light Mayo
1 TBSP Plain Greek Yogurt
1/2 TSP Low Sodium Soy Sauce
1/2 TSP Granulated Garlic
1 TSP Sriracha Sauce
Salt & Pepper to taste
Directions:
Spray a large skillet with non-stick cooking spray.
Chop the onions into small pieces. Add the sesame oil, chopped onions, and minced garlic and cook for about 3-4 minutes. Add in the ground turkey and fully cook.
Add in the coleslaw, red cabbage, chopped carrots, granulated onion and granulated ginger. Stir and cook for about 5 minutes.
Add in the rice vinegar and the soy sauce. Turn down to low heat and cook for another 6-8 minutes. Transfer into a bowl
Microwave the broccoli or cook as desired. Add the cooked broccoli to the bowl.
Mix together all ingredients in the sauce. Slice the green onions.
Add the sauce, sliced green onions, and salt & pepper to the mixture and enjoy!
Note: If meal prepping this for the week - its best to make the sauce the day of!
