English Muffin Mini Breakfast "Pizzas"

What You Need:

  • 1 Whole Wheat English Muffin

  • 1/2 Chicken Sausage Link

  • 1 TBSP Chopped Green Onions

  • 2 TBSP Chopped Green Pepper

  • 2 TBSP Chopped Mushrooms

  • 2 Eggs

  • 1/4 Cup Shredded Part-Skim Mozzarella Cheese

  • Salt & Pepper to taste


Directions:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or spray with non-stick cooking spray.

  • Split the whole wheat english muffin in half and place on baking sheet. Set aside for now.

  • Chop the green onions, green pepper, mushrooms, and chicken sausage into small pieces. Use a large skillet and cook on the stovetop on medium heat for about 5-7 minutes or until the vegetables and chicken sausage are slightly brown.

  • In a bowl, whisk the eggs and add salt and pepper to taste. Add the eggs to the skillet and scrambled until fully cooked.

  • Add the mixture to each english muffin half on the baking sheet. Sprinkle with mozzarella cheese.

  • Bake for about 7-9 minutes or until the cheese is melted and the english muffins are slightly brown. Enjoy!
