English Muffin Mini Breakfast "Pizzas"

What You Need:
1 Whole Wheat English Muffin
1/2 Chicken Sausage Link
1 TBSP Chopped Green Onions
2 TBSP Chopped Green Pepper
2 TBSP Chopped Mushrooms
2 Eggs
1/4 Cup Shredded Part-Skim Mozzarella Cheese
Salt & Pepper to taste
Directions:
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or spray with non-stick cooking spray.
Split the whole wheat english muffin in half and place on baking sheet. Set aside for now.
Chop the green onions, green pepper, mushrooms, and chicken sausage into small pieces. Use a large skillet and cook on the stovetop on medium heat for about 5-7 minutes or until the vegetables and chicken sausage are slightly brown.
In a bowl, whisk the eggs and add salt and pepper to taste. Add the eggs to the skillet and scrambled until fully cooked.
Add the mixture to each english muffin half on the baking sheet. Sprinkle with mozzarella cheese.
Bake for about 7-9 minutes or until the cheese is melted and the english muffins are slightly brown. Enjoy!
Note: This is a great recipe to meal prep in advance for the week!
