Ground Beef Burger + Cucumber Goat Cheese Salad

What You Need:
For the Burger
1 Whole Wheat Sandwich Thin
1 Ground Beef Patty
Italian Seasoning
Light Mayo
1 Small Tomato
1 Avocado
For the Salad
3 Cups of Lettuce (or greens mixture of choice)
3 Tablespoons Goat Cheese
2 Tablespoons Chopped Walnuts
1/2 Chopped Cucumber
1/4 Cup Chopped Red Onions
1 Teapsoon Chopped Parsley
For the Salad Dressing:
2 Teapsoons of Olive Oil
1 Teaspoon Lime Juice
1 Teaspoon of Balsamic Vinegar
Italian Seasoning to taste
Black Pepper to taste
NOTE - You can substitute your salad dressing of choice.
Directions:
For the Burger
On medium heat, fully cook the ground beef patty. Add italian seasoning and let cool.
Chop the avocado and tomato into slices.
Spread the light mayo on the sandwich thin.
Add all components together and top with ketchup or other sauce of choice.
For the Salad
Add the lettuce into a large bowl.
Chop the onion, cucumber, and parsley and add to bowl.
Add the goat cheese and walnuts.
Top with all components of the salad dressing and enjoy!
