Ground Beef Burger + Cucumber Goat Cheese Salad

What You Need:


For the Burger

  • 1 Whole Wheat Sandwich Thin

  • 1 Ground Beef Patty

  • Italian Seasoning

  • Light Mayo

  • 1 Small Tomato

  • 1 Avocado


For the Salad

  • 3 Cups of Lettuce (or greens mixture of choice)

  • 3 Tablespoons Goat Cheese

  • 2 Tablespoons Chopped Walnuts

  • 1/2 Chopped Cucumber

  • 1/4 Cup Chopped Red Onions

  • 1 Teapsoon Chopped Parsley


For the Salad Dressing:

  • 2 Teapsoons of Olive Oil

  • 1 Teaspoon Lime Juice

  • 1 Teaspoon of Balsamic Vinegar

  • Italian Seasoning to taste

  • Black Pepper to taste


NOTE - You can substitute your salad dressing of choice.


Directions:


For the Burger

  • On medium heat, fully cook the ground beef patty. Add italian seasoning and let cool.

  • Chop the avocado and tomato into slices.

  • Spread the light mayo on the sandwich thin.

  • Add all components together and top with ketchup or other sauce of choice.

For the Salad

  • Add the lettuce into a large bowl.

  • Chop the onion, cucumber, and parsley and add to bowl.

  • Add the goat cheese and walnuts.

  • Top with all components of the salad dressing and enjoy!
