Lemon Pepper Chicken with Roasted Brussels, Cashews & Cranberries

This dish is packed with protein from tender chicken thighs and healthy fats from cashews and olive oil. Brussels sprouts provide fiber, vitamins, and antioxidants, while dried cranberries add a natural touch of sweetness. Together, they create a balanced meal that supports energy and overall wellness.


Note: The amounts below are for 1 serving. Increase the quantities based on the number of servings you want to make when meal prepping!
Ingredients:
4 oz chicken thighs
2 cups Brussels sprouts
1/4 cup cashews
1/4 cup dried cranberries
Olive oil
Lemon pepper seasoning
BBQ sauce for topping
Directions:
Preheat the oven to 350°F (175°C).
Spray two baking sheets with non-stick spray or line with parchment paper.
Place the chicken thighs on one baking sheet. Drizzle with olive oil and sprinkle lemon pepper seasoning.
Chop the Brussels sprouts and place them on the other baking sheet. Add cranberries and cashews. Drizzle with olive oil and your preferred seasonings.
Bake for 25-35 minutes, until chicken is fully cooked and Brussels sprouts are browned.
Serve with BBQ sauce on top.
