Mediterranean Hummus Toast

What You Need:

  • 2 Pieces of Whole Wheat Toast

  • 2-3 TBSP Hummus - flavor of choice

  • 1/4 Cup Chopped Spinach

  • 1/4 Cup Cherry Tomatoes

  • 1/4 Cup Chopped Cucumbers

  • 1 TBSP Green Onions

  • 2 TBSP Feta Cheese

  • 1/2 TBSP Olive oil

  • 1/2 TBSP Lemon Juice

  • 1 TSP Sesame Seeds

  • 1 TSP Oregano

  • Salt & Pepper - to taste


Directions:

  • Spread the hummus onto the whole wheat toast.

  • Chop the cucumber, spinach, tomatoes, and green onions into small pieces. Add to a bowl.

  • Add in the feta cheese, olive oil, lemon juice, sesame seeds, oregano, and salt and pepper. Fully stir.

  • Add the mixture evenly to the toast. Enjoy!
