Protein-Packed Fajita Bowl

Total Time: About 35 Minutes | Makes 1 Serving

What You Need:

  • About 4 oz of a steak or pork chop

  • 2 TBSP Roasted Red Peppers

  • 1 Cup Sliced Bell Peppers

  • 1/4 Cup Diced Onions

  • 1 Bag Frozen Cauliflower Rice - I used the Aldi brand

  • 1 TSP Lime Juice

  • 1 TSP Minced Garlic

  • 1 TSP Fajita Seasoning

  • 1 TSP Cumin

  • Coconut Oil or Olive Oil

  • Salt & Pepper

  • Shredded Cheese - Optional for topping

  • Ricotta Cheese - Optional for topping

  • 1 Avocado - Optional for topping


Directions:

  • In a bowl, add 2 TSP of olive oil or coconut oil, the lime juice, minced garlic, cumin, and fajita seasoning. Fully mix. Coat the steak or pork chop with the mixture and cover for about 15 minutes.

  • Slice the bell peppers and the onions. Add the sliced bell peppers, onions, and roasted red peppers to a skillet. Add seasonings and cook on medium heat until soft. Remove from skillet and set aside.

  • Add the meat to the skillet and fully cook.

  • Microwave the cauliflower rice according to package directions. Let cool.

  • Add all components to a bowl. Top with lime juice, the avocado, shredded cheese, ricotta cheese, and salt & pepper to taste. Enjoy!
