Ricotta & Pepper Jack Cheese Breakfast Muffins

Total Time: About 45 Minutes| Makes 6-7 Muffins
An easy breakfast idea to prep in advance and have on hand for the week!



Ingredients:
1 3/4 Cup Almond Flour
1 Cup Ricotta Cheese
4 Eggs
1 TSP Baking Powder
2 TBSP Almond Milk (or milk of choice)
4 Cups Chopped Broccoli - Frozen
3/4 Cup Grated Pepper Jack Cheese
1/4 TSP Lemon Pepper Seasoning
Salt & Pepper to taste
Directions:
Heat the oven to 400 degrees F.
Line a muffin tray with muffin liners.
Microwave the broccoli according to package directions. Let cool. Once cooled, chop into small pieces.
In a large bowl whisk together the eggs, ricotta cheese, and almond milk. Stir in the almond flour and baking powder. Fully combine.
Add 1/2 cup of the pepper jack cheese, the chopped broccoli, and the seasonings.
Spoon into 7 muffin cups. Top with the remainder of the pepper jack cheese.
Bake for about 25-28 minutes or until the tops are slightly brown. Let cool and enjoy!
Suggestion: Enjoy with chicken sausage or an apple on the side!
