Ricotta & Pepper Jack Cheese Breakfast Muffins

An easy breakfast idea to prep in advance and have on hand for the week!

Ingredients:

  • 1 3/4 Cup Almond Flour

  • 1 Cup Ricotta Cheese

  • 4 Eggs

  • 1 TSP Baking Powder

  • 2 TBSP Almond Milk (or milk of choice)

  • 4 Cups Chopped Broccoli - Frozen

  • 3/4 Cup Grated Pepper Jack Cheese

  • 1/4 TSP Lemon Pepper Seasoning

  • Salt & Pepper to taste


Directions:

  • Heat the oven to 400 degrees F.

  • Line a muffin tray with muffin liners.

  • Microwave the broccoli according to package directions. Let cool. Once cooled, chop into small pieces.

  • In a large bowl whisk together the eggs, ricotta cheese, and almond milk. Stir in the almond flour and baking powder. Fully combine.

  • Add 1/2 cup of the pepper jack cheese, the chopped broccoli, and the seasonings.

  • Spoon into 7 muffin cups. Top with the remainder of the pepper jack cheese.

  • Bake for about 25-28 minutes or until the tops are slightly brown. Let cool and enjoy!

  • Suggestion: Enjoy with chicken sausage or an apple on the side!
