Salmon, Brown Rice, and Edamame Bowl

What You Need:


Ingredients for the Salmon:

  • 1 Salmon Filet

  • Olive Oil

  • Garlic Powder

  • Paprika

  • Salt & Pepper to taste


Ingredients for the Bowl & Dressing

  • 1 Cup Cooked Brown Rice

  • 1/2 Cup Cucumbers - diced

  • 2 TBSP Shredded Carrots

  • 1/2 Cup Edamame

  • Sesame seeds - for topping

  • Avocado - for topping

  • 1 TBSP Low Sodium Soy Sauce - for dressing

  • 1 TSP Sesame Seed Oil - for dressing

  • 1 TSP Honey - for dressing

  • 1 TSP Rice Vinegar - for dressing


Directions:

  • Add olive oil to a non-stick pan on medium heat.

  • Season the salmon with garlic powder, paprika, and salt/pepper to taste. Add the salmon to the skillet.

  • Cook for about 4-5 minutes on each side or until fully cooked. Let cool and set aside.

  • Cook the rice according to package directions.

  • Microwave the edamame according to package directions.

  • Dice the cucumbers into small pieces. Add the cooked rice, edamame, cucumbers, and shredded carrots to a bowl.

  • Dice the salmon into small pieces and add to the bowl.

  • In a separate small bowl, prepare the ingredients for the dressing. Fully combine.

  • Add the dressing to the salmon bowl. Top with sesame seeds and avocado. Enjoy!
