Salmon, Brown Rice, and Edamame Bowl

Total Time: About 20 Minutes | Makes 1 Serving

What You Need:
Ingredients for the Salmon:
1 Salmon Filet
Olive Oil
Garlic Powder
Paprika
Salt & Pepper to taste
Ingredients for the Bowl & Dressing
1 Cup Cooked Brown Rice
1/2 Cup Cucumbers - diced
2 TBSP Shredded Carrots
1/2 Cup Edamame
Sesame seeds - for topping
Avocado - for topping
1 TBSP Low Sodium Soy Sauce - for dressing
1 TSP Sesame Seed Oil - for dressing
1 TSP Honey - for dressing
1 TSP Rice Vinegar - for dressing
Directions:
Add olive oil to a non-stick pan on medium heat.
Season the salmon with garlic powder, paprika, and salt/pepper to taste. Add the salmon to the skillet.
Cook for about 4-5 minutes on each side or until fully cooked. Let cool and set aside.
Cook the rice according to package directions.
Microwave the edamame according to package directions.
Dice the cucumbers into small pieces. Add the cooked rice, edamame, cucumbers, and shredded carrots to a bowl.
Dice the salmon into small pieces and add to the bowl.
In a separate small bowl, prepare the ingredients for the dressing. Fully combine.
Add the dressing to the salmon bowl. Top with sesame seeds and avocado. Enjoy!
