"Samoa" Truffles

What You Need:

  • 1 Cup Coconut Flakes

  • 1 Cup Coconut Flour or Almond Flour (if you don't like the texture of coconut flour then I would use almond flour).

  • 1 Cup Dates - pitted

  • 1 TBSP Almond Milk

  • 1 /4 Cup Agave or Maple Syrup

  • 1 TSP Vanilla Extract

  • 1 TBSP Coconut Oil, Melted

  • 3/4 Cup Chocolate Chips

  • 1 TSP Coconut Oil - for melted chocolate


Directions:

  • Preheat the oven to 325 degrees.

  • Add parchment paper to a large baking pan. Bake the coconut flakes for about 4-5 minutes. Let cool and set aside.

  • Remove the pits from the dates. Add the dates, baked coconut flakes, and almond milk to a food processor or blender. Blend until combined. Note: Save a few coconut flakes for the topping.

  • In a large bowl, add the blended mixture. Add the coconut flour, agave, and vanilla. Fully combine.

  • Place into the refrigerator for about 5 minutes.

  • Remove from the refrigerator and form 12 balls.

  • In a separate bowl, melt the chocolate chips and coconut oil in small increments until fully melted.

  • Dip each ball into the chocolate. Sprinkle with coconut flakes and place back into the refrigerator for another 15 minutes. Store in the refrigerator. Enjoy!
