"Samoa" Truffles

Total Time: 45 Minutes | makes About 12 Truffles


What You Need:
1 Cup Coconut Flakes
1 Cup Coconut Flour or Almond Flour (if you don't like the texture of coconut flour then I would use almond flour).
1 Cup Dates - pitted
1 TBSP Almond Milk
1 /4 Cup Agave or Maple Syrup
1 TSP Vanilla Extract
1 TBSP Coconut Oil, Melted
3/4 Cup Chocolate Chips
1 TSP Coconut Oil - for melted chocolate
Directions:
Preheat the oven to 325 degrees.
Add parchment paper to a large baking pan. Bake the coconut flakes for about 4-5 minutes. Let cool and set aside.
Remove the pits from the dates. Add the dates, baked coconut flakes, and almond milk to a food processor or blender. Blend until combined. Note: Save a few coconut flakes for the topping.
In a large bowl, add the blended mixture. Add the coconut flour, agave, and vanilla. Fully combine.
Place into the refrigerator for about 5 minutes.
Remove from the refrigerator and form 12 balls.
In a separate bowl, melt the chocolate chips and coconut oil in small increments until fully melted.
Dip each ball into the chocolate. Sprinkle with coconut flakes and place back into the refrigerator for another 15 minutes. Store in the refrigerator. Enjoy!
