Enjoy a vibrant and refreshing Shrimp & Mango Cauliflower Rice Bowl that’s bursting with fresh flavors and wholesome ingredients. Packed with protein, fiber, and a zesty lime dressing, this quick and easy meal is perfect for a healthy lunch or dinner that fuels your day.


What You Need:
4 oz frozen cooked shrimp
½ cup frozen cauliflower rice
¼ cup diced mango
1 avocado
½ cucumber
2 tbsp sliced jalapeño peppers
½ cup frozen edamame
¼ cup diced red onion
For the Dressing:
2 tsp lime juice
1 tsp olive oil
½ tsp agave syrup or honey
¼ tsp Dijon mustard
Salt & pepper, to taste
Directions:
Cook the shrimp according to package instructions. Season as desired.
Dice the mango, cucumber, jalapeño peppers, avocado, and red onion. Set aside.
Microwave the cauliflower rice and edamame according to package instructions.
In a bowl, combine the shrimp, diced produce, cauliflower rice, and edamame.
Mix together the dressing ingredients, then drizzle over the bowl. Toss gently and enjoy!
