Spinach & Feta Egg Breakfast Wrap!

Total Time: About 10 Minutes | Makes 1 Serving

What You Need:

  • 1 Whole Wheat Wrap (or wrap of choice)

  • 2 Eggs + 1 Egg White

  • 1 Cup Chopped Spinach

  • 1/3 Cup Sun-Dried Tomatoes

  • 1/4 Cup Feta Cheese

  • 1 Tsp Italian Seasoning

  • Salt and Pepper to Taste


Directions:

  • Add non-stick spray or olive oil to a pan on medium heat.

  • Heat the wrap on the pan on each side for about 30 seconds. Remove and set aside.

  • Add the spinach to the pan and cook for about 3-4 minutes.

  • Crack the eggs and place the 2 eggs and egg whites into a bowl and whisk together. Set aside.

  • Add the sun-dried tomatoes (drained) and seasonings and continue to cook for another 2 minutes.

  • Add the egg mixture over the spinach and tomatoes and cook for about 3-4 minutes. Add the feta over the eggs.

  • Add the egg mixture to the wrap and roll up. Use a toothpick to stick together. Enjoy!
