Sweet Chili Chicken Meatball Bowls

Another easy & balanced meal prep idea :)



What You Need:
About 28 ounces ground chicken (4 oz per serving)
3/4 Cup Breadcrumbs
2 Large Eggs
2 TBSP Low Sodium Soy Sauce
1 TSP Granulated Garlic
2 TSP Ground Ginger
About 2 Cups Brown Rice, Dry
5 Cups Broccoli, Frozen (about 3/4 cup per serving)
3.5 Cups Shredded Carrots (about 1/2 cup per serving)
0.5 Cups Chopped Green Onions
Sesame Seeds - for topping
Salt & Pepper - to taste
Sweet Thai Chili Sauce - for topping
Directions:
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or spray with non-stick cooking spray.
In a large bowl, combine the eggs, breadcrumbs, low-sodium soy sauce, granulated garlic, ground ginger, and salt and pepper.
Add the ground chicken into the bowl and fully combine.
Form the mixture into small balls and place on the baking sheet.
Bake for about 18-20 minutes or until fully cooked. Let cool.
Cook the brown rice according to the package directions. Microwave the broccoli. Let cool.
Add the cooked brown rice, broccoli, and carrots to a bowl (distribute between 7 bowls if meal prepping).
Add the cooked meatballs to the bowls. Top with the sweet chili seasoning, green onions, sesame seeds, and salt and pepper. Enjoy!
