Sweet Chili Chicken Meatball Bowls

What You Need:

  • About 28 ounces ground chicken (4 oz per serving)

  • 3/4 Cup Breadcrumbs

  • 2 Large Eggs

  • 2 TBSP Low Sodium Soy Sauce

  • 1 TSP Granulated Garlic

  • 2 TSP Ground Ginger

  • About 2 Cups Brown Rice, Dry

  • 5 Cups Broccoli, Frozen (about 3/4 cup per serving)

  • 3.5 Cups Shredded Carrots (about 1/2 cup per serving)

  • 0.5 Cups Chopped Green Onions

  • Sesame Seeds - for topping

  • Salt & Pepper - to taste

  • Sweet Thai Chili Sauce - for topping



Directions:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or spray with non-stick cooking spray.

  • In a large bowl, combine the eggs, breadcrumbs, low-sodium soy sauce, granulated garlic, ground ginger, and salt and pepper.

  • Add the ground chicken into the bowl and fully combine.

  • Form the mixture into small balls and place on the baking sheet.

  • Bake for about 18-20 minutes or until fully cooked. Let cool.

  • Cook the brown rice according to the package directions. Microwave the broccoli. Let cool.

  • Add the cooked brown rice, broccoli, and carrots to a bowl (distribute between 7 bowls if meal prepping).

  • Add the cooked meatballs to the bowls. Top with the sweet chili seasoning, green onions, sesame seeds, and salt and pepper. Enjoy!
