Sweet Potato Breakfast Bowls

An easy and nutrient packed breakfast idea for the sweet potato lovers!

What You Need:
1 Medium Sweet Potato
2 TBSP Almond Milk (or milk of choice)
1/2 TBSP Almond Butter (or nut butter of choice)
1 TBSP Flax Seed
1 TBSP Agave Syrup or Maple Syrup
1 TSP Vanilla Extract
1 TSP Cinnamon
1-2 TBSP Pistachios - for topping
1/4 Cup Cherries - for topping
Note - you can add or substitute toppings of your choice!
Directions:
Pierce the sweet potato with a fork or knife. Microwave for about 8-10 minutes or until soft.
Once cooked, let cool for a few minutes. Scoop the insides of the sweet potato into a bowl. Add the flax seed, milk, almond butter, agave syrup, vanilla, and cinnamon. Fully combine.
Top with pistachios and cherries or other toppings of choice!
