Sweet Potato Breakfast Bowls

An easy and nutrient packed breakfast idea for the sweet potato lovers!

What You Need:

  • 1 Medium Sweet Potato

  • 2 TBSP Almond Milk (or milk of choice)

  • 1/2 TBSP Almond Butter (or nut butter of choice)

  • 1 TBSP Flax Seed

  • 1 TBSP Agave Syrup or Maple Syrup

  • 1 TSP Vanilla Extract

  • 1 TSP Cinnamon

  • 1-2 TBSP Pistachios - for topping

  • 1/4 Cup Cherries - for topping

  • Note - you can add or substitute toppings of your choice!


Directions:

  • Pierce the sweet potato with a fork or knife. Microwave for about 8-10 minutes or until soft.

  • Once cooked, let cool for a few minutes. Scoop the insides of the sweet potato into a bowl. Add the flax seed, milk, almond butter, agave syrup, vanilla, and cinnamon. Fully combine.

  • Top with pistachios and cherries or other toppings of choice!
