Sweet & Savory Chicken Sausage Protein Muffins

What You Need:

  • 2 Cups Kodiak Cake Pancake Mix - I used the birthday cake flavor

  • 3 Eggs

  • 2 TBSP Agave Syrup

  • 1 Cup Almond Milk (or milk of choice)

  • 2/3 Cup Chopped Spinach

  • 4 Chopped Chicken Sausage Links

  • Salt & Pepper to Taste


Directions:

  • Preheat the oven to 375 degrees F. Line a muffin tray with liners or spray with non-stick cooking spray.

  • In a large bowl, add the pancake mix, eggs, milk, agave syrup, and salt and pepper. Fully mix.

  • Chop the chicken sausage and and spinach into small pieces. Add to the batter and stir.

  • Add the batter evenly between the muffin pan. Bake for about 17-19 minutes or until a toothpick comes out clean. Let cool.

  • Enjoy plain or drizzle agave syrup on the top!
