Sweet & Savory Chicken Sausage Protein Muffins

Another protein-packed breakfast idea to prep in advance!



What You Need:
2 Cups Kodiak Cake Pancake Mix - I used the birthday cake flavor
3 Eggs
2 TBSP Agave Syrup
1 Cup Almond Milk (or milk of choice)
2/3 Cup Chopped Spinach
4 Chopped Chicken Sausage Links
Salt & Pepper to Taste
Directions:
Preheat the oven to 375 degrees F. Line a muffin tray with liners or spray with non-stick cooking spray.
In a large bowl, add the pancake mix, eggs, milk, agave syrup, and salt and pepper. Fully mix.
Chop the chicken sausage and and spinach into small pieces. Add to the batter and stir.
Add the batter evenly between the muffin pan. Bake for about 17-19 minutes or until a toothpick comes out clean. Let cool.
Enjoy plain or drizzle agave syrup on the top!
