Tilapia with Baked Green Beans & Basmati Rice - Meal Prep!

Total Time: About 45 Minutes | Makes About 7 Servings


What You Need:
7 Frozen Tilapia Filets
About 7 Cups of Fresh Green Beans (1 Cup Per Serving)
About 2 Cups (dry) of Brown Basmati Rice
1 TBSP Olive Oil
3 TBSP Toasted Sesame Oil
1/4 Cup Reduced-Sodium Soy Sauce
About 3 TBSP of sliced almonds (for topping)
Granulated Garlic
Lemon Pepper Seasoning
Directions:
Preheat the oven to 425 degrees.
Place the frozen tilapia filets in a large bowl of water to thaw for about 5-10 minutes.
Spray 2 large baking pans with non-stick spray. On one pan, add the green beans and spread. Add the olive oil and coat with the granulated garlic, lemon pepper seasoning, or other seasonings of choice. Bake at 425 degrees for about 25 minutes. Remove and let cool and set aside.
On the other baking pan, spread out the tilapia filets and season as desired. Bake tilapia for about 12-15 minutes. Remove and let cool.
When the green beans and tilapia are in the oven, cook the basmati rice according to the package directions. Season as desired. Once cooled, spread into 7 different meal prep containers.
On a medium skillet, add the toasted sesame oil on low/medium heat. Add in the soy sauce and stir for about 1 minute.
Take the cooked tilapia and add to the pan with the sesame oil and soy sauce. Let the sauce soak through for about a minute and carefully flip sides. Once all tilapia filets are coated, set aside.
Add the baked green beans to the meal prep containers. Add a tilapia filet to each container.
Top with a few sliced almonds and enjoy :)
