Tomato & Feta Stuffed Chicken + Side Salad

This flavorful stuffed chicken breast is filled with a delicious mix of feta, fire-roasted tomatoes, and spinach, seasoned perfectly with lemon pepper. Paired with a fresh, vibrant side salad, it makes for a healthy and satisfying meal that’s easy to prepare and bake. Perfect for a quick weeknight dinner!

What You Need:

For the Chicken
  • 1 Chicken breast

  • 2 tbsp Feta cheese

  • 2 tbsp Fire-roasted canned tomatoes (drained)

  • 1 tbsp Chopped spinach

  • ½ tsp Lemon pepper seasoning (or seasonings of choice)

  • Olive oil


For the Side Salad
  • 3 cups Mixed greens

  • ½ cup Chopped bell peppers

  • 3 tbsp Chopped red onions

  • 1–2 tbsp Shredded cheddar cheese

  • 1–2 tbsp Balsamic vinaigrette (or dressing of choice)


Directions:

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together the feta cheese, fire-roasted tomatoes, chopped spinach, and lemon pepper seasoning until fully combined.

  3. Slice a pocket into the chicken breast using a sharp knife, being careful not to cut all the way through.

  4. Stuff the chicken breast with the prepared filling.

  5. Brush the outside of the chicken with olive oil and sprinkle with lemon pepper or your preferred seasonings.

  6. Bake the stuffed chicken for about 25 minutes, or until the internal temperature reaches 165°F and the chicken is fully cooked.

  7. While the chicken bakes, prepare the side salad by combining mixed greens, chopped bell peppers, red onions, and shredded cheddar cheese. Drizzle with balsamic vinaigrette or dressing of your choice.
