Veggie Noodle Spaghetti & Meatballs + Side Salad

Ingredients:

  • 1/2 Cup Zucchini Spirals - I used the Target brand

  • 1/2 Cup Butternut Squash Spirals - I used the Target brand

  • 4 Ounces Meatballs

  • 1/2 Cup Tomato & Basil Pasta Sauce

  • 1/4 Cup Parmesan Cheese

  • 1 Tsp Granulated Onion

  • 1 Tsp Granulated Garlic

  • 1/2 Tsp Italian Seasoning

  • Salt & Pepper to taste



Ingredients for side salad:

  • 2 Cups Romaine Lettuce

  • 1 TBSP Red Onions

  • 1 TBSP Parmesan Cheese

  • 1 TSP Lemon Juice - for dressing

  • 1/2 TBSP Olive oil - for dressing

  • 1/2 TBSP agave or honey - for dressing

  • Salt & Pepper to taste

  • Option - you can use your salad dressing of choice!


Directions:

  • Fully cook the meatballs according to the package directions. Let cool and set aside.

  • Cook the zucchini noodles according to the package directions. Drain excess water.

  • Combine the cooked zucchini, pasta sauce, and seasonings. Add in the meatballs and top with parmesan cheese.

  • Combine all components for the side salad.

  • In a separate bowl, mix together the lemon juice, olive oil, agave (or honey), and salt and pepper. Add to the salad or use your salad dressing of choice. Enjoy!
